Pork, Apple and Cabbage Rice Bowl
Chris and I try and cook at least four meals at home each week so I thought it would be a cool idea to share this Pork, Apple and Cabbage Rice Bowl with y’all this week. It’s definitely a favorite around here. Chris found it in Men’s Health Magazine a few months back and boy is it delicious and super easy! It’s definitely on rotation around our house. He’s modified it a little from the original recipe so here is how he prepares it. Bon Appetit!
Ingredients:
1 cup brown minute rice
1-2 lbs Boneless pork loin or pork chops
3 Gala apples sliced into 1/2 inch wedges
2 tbs grape seed oil
1 tsp paprika
1 tsp chopped onion
1 1/2 tsp onion powder
1 tsp garlic salt
1 1/2 tsp garlic powder
1 tsp rosemary
2 cups sliced red cabbage
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp chopped walnuts
Directions:
1. Preheat broiler with rack 4 inches from heat
2. Slice pork loin into medallions and coat with 1 tbsp grapeseed oil along with the following seasonings: 1 teaspoon paprika, 1 teaspoon chopped onion, 1 1/2 teaspoons onion powder, 1 teaspoon garlic salt, 1 1/2 teaspoons garlic powder, 1 teaspoon rosemary and a dash of pepper.
3. Place pork on greased foil on a baking sheet for easy clean up. Broil for 4 minutes. Then add the apple to the pan and broil another 4 minutes. Then add the cabbage with a pinch of salt and broil until tender and darkened in spots, about 5 minutes.
4. Whisk together 2 tbsp Dijon mustard, 2 tbsp olive oil, 1 tbsp apple cider vinegar , 1 tbsp water, and a pinch of salt. Stir in walnuts.
5. Prepare brown minute rice using the package directions.
6. Divide rice among bowls and top with cabbage, apples, pork, and drizzle with mustard sauce.
