Chris’ Tortilla Egg Bake
Chris made these amazing Tortilla Egg Bakes tonight and it was just too yummy not to share! I asked him how he made it since he didn’t really follow a particular recipe. I definitely wanted to document this one so I can ask him to make it for us again! You’ll need two 9 inch cast iron skillets to make this meal for two.
Ingredients:
2 10 inch Carb Balance Tortillas
5 large eggs beaten
4 Tablespoons Low Fat Cottage Cheese
1/3 pack cooked Jimmy Dean Sausage
1/2 cup shredded cheddar cheese
4 slices uncured cooked bacon
1/4 cup diced red pepper
1/8 cup diced onion
cooking spray
salt and pepper to taste
Directions
*You’ll need two 9 inch cast iron skillets for this recipe.
Preheat Oven to 350 degrees.
Cook sausage and bacon according to package directions.
Spray cast iron skillets with cooking spray of your choice as well as the backside of the tortillas that you will be placing inside each of the skillets
Dice the red pepper and onion.
Whisk eggs with the cottage cheese and season with salt and pepper to taste.
Pour in the egg mixture measuring evenly between the two skillets, then add in the sausage, bacon and remaining ingredients.
Bake for 12 minutes and broil on high for one minute.

How many eggs? Am I just missing the egg part. Could be. Long day.
