Fried Green Tomatoes
Last weekend we took a trip up to Cotton Hills Farm and came home with some fresh produce. I wasn’t leaving without a green tomato because I couldn’t remember the last time I made fried green tomatoes. I typically would use breadcrumbs or panko for this recipe, but I was fresh out. So I decided to crumble up some oyster crackers we had left in the pantry and they came out incredible y’all! So I’ll be using those from here on out anytime I make them. The crunch was amazing!
Ingredients:
1 large Green Tomato
1/4 cup olive oil or vegetable oil
1 cup crushed oyster crackers
1 or 2 large eggs beaten
1/2 cup all purpose flour
1/2 tsp garlic powder
Salt and pepper
The sauce on top is a store bought brand named Kinders Classic Burger Sauce
Directions:
Preheat oven to 200° (this is just to keep them warm after cooking)
Slice your tomato into 1/4 inch slices.
In a large pot (I used a Dutch oven) heat on medium high heat and pour in oil. Test the oil by throwing in a pinch of flour. If it bubbles it’s ready for frying.
While that’s heating season the tomatoes with salt and pepper and garlic powder. Dredge them first in the flour, shake off any excess flour then the egg wash and lastly the crushed oyster crackers.
Fry the tomatoes in the Dutch oven or pan until golden brown. Time will vary just keep an eye on them. Flip and repeat.
Place them on a wire rack so they don’t get soggy. After they are all fried stick them in the warm oven. I just kept them warm until the rest of the meal was made. No longer than 10 minutes. They will stay nice and crispy this way.
