Pumpkin Spice Cake
My talented friend Ashley @asweetatthetable shared this easy Pumpkin Spice Cake recipe recently and it inspired me to dust off my Bundt Cake pan and get to baking!
Ingredients:
1 Box Spiced Cake Mix
1 can Pumpkin Purée
2 eggs
1 cup chocolate chips (she also suggested the cinnamon chips by Hersheys)
Butter for greasing pan
I decided to make a drizzle for the cake:
Drizzle Ingredients:
2 cups confectioners sugar
3 TBS water
1/2 tsp vanilla extract
Directions:
Preheat oven to 350°
Grease Bundt cake pan with butter or cooking spray
Mix cake mix, 2 eggs, and pumpkin purée in a medium bowl.
Pour mixture into the prepared pan.
Bake for 38 min.
While that’s baking prepare your drizzle.
Mix the sugar, water and vanilla in a small bowl and after the cake has completely cooled turn it upside down on a plate or cake plate.
Drizzle using a spoon going back and forth over the cake.
